1 1/2 c whole milk
2 eggs
2 c. flour
2 tsp. seasoned salt
black pepper
3/4 tsp. paprika
1/4 tsp. cayenne pepper
3 lbs. cubed steaks
kosher salt
1/2 c. vegetable oil
1 T butter

Directions:

Mix beaten eggs in one dish; flour, salt, pepper, paprika, and cayenne in another, meat in another and clean plate to put breaded meat on. Sprinkle both sides with salt and pepper. Put in flour mixture, turn to coat, place in milk and egg mixture, turn to coat and put back in flour mixture. Place on plate. Heat oil in large skilled to medium, add butter. Drop in a few sprinkles of flour to make sure oil is hot. Cook 3 pieces 2 minutes per side. Put on foil. Repeat till all meat is cooked. Drain all but 1/4 c.grease from skillet and allow to heat. Sprinkle flour evenly over grease and cook till roux is deep golden brown. Add milk, whisking until gravy is smooth and thick. Add more milk is necessary. Serve with steaks.
