3 large potatoes
2 - 3 boiled eggs
pimientos, chopped
1/2 cup chopped onion
1/2 cup chipped dill pickles and a few sweet pickles
Salt and pepper to taste
1 tablespoon mustard
mayonnaise

Directions:
Directions:
Boil potatoes with skins on until tender.
Boil eggs separately. Add salt to the water and bring to a boil, turnoff the burner and put a lid on the pot. Let sit about 9 minutes and then cool and peel immediately for perfect boiled eggs.
Peel potatoes and add salt and pepper to taste. Add remaining ingredients and a little bit of dill pickle juice. Add enough mayo to make the salad creamy.

Aunt Pat was an incredible cook. She worked at the school cafeteria after Uncle Hoot died. I got this recipe from her when I visited her in Stephenville.
