3 lbs. fresh pearl onions
5 T. butter
1 tsp. sugar
3/4 tsp. salt
Pepper to taste
1/2 c. water
2/3 c. heavy cream
2/3 c. parsley, chopped

Directions:
Directions:
Blanch onions for about 3 minutes; then peel. In a large skillet, melt butter, sugar, salt and pepper; add onions and water and simmer until the liquid is gone. Swirl onions until browned; add cream and boil until thickened; add parsley.
