1 1/4 lbs lean ground turkey
1 10 oz can enchilada sauce
1 8 oz can tomato sauce
1 small can black olives, drained
1 can black beans, rinsed and drained
1 can refrigerator buttermilk biscuits cut into quarters
1 cup shredded Mexican cheese

Directions:
Directions:
Preheat oven to 350º Lightly spray a 9 x 13 pan.
Brown turkey in large skillet. Add enchilada sauce, tomato sauce, black beans, black olives and stir to combine. Stir the biscuit pieces into the meat mixture.
Transfer the entire mixture to the baking dish and spread out evenly. Bake for 25 minutes. Remove from the oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.

Found this recipe through Erin on Pinterest. I added the black beans and black olives. Also, I use the regular size biscuits and don't use the whole can.
