6 cups mashed potatoes, cooled
2 eggs, beaten
1 teaspoon grated onion
1/8 cup finely chopped parsley
1 cup grated American Cheese
1/8 teaspoon pepper
2 teaspoons salt
1 cup uncooked dehydrated potatoes
1 cup flour

Cracker Crumbs
Directions:
Directions:
Mix all ingredients (except cracker crumbs) together by hand.
Use a small scoop --rounded tablespoon of mixture. Shape into balls about one inch in diameter. Press to form a slightly flatten silver-dollar size dumplings.
Roll in fine cracker crumbs. If not cooking right away cover and refrigerate.
Deep fry a few at a time in cooking oil until golden brown.
