1 large bunch of Broccoli spears
2/3 cup of ripe olives chopped
2 hard boiled eggs chopped
7 oz. of pimentos drained and chopped
1 cup of sliced fresh mushrooms

Dressing: 1 tbs. lemon juice
1/2 tbs. sugar
1 cup Mayo
1 tbs vinegar
1 small onion grated
Salt and Pepper

Directions:
Directions:
Cut broccoli including stalks into cubes. Add olives, eggs, mushtooms, and 1/2 pimentos. Combine Mayo, lemon juice, sugar, onion, and salt and pepper. Toss with Broccoli mix. Serve on bed of lettuce and garnish with remaining pimentos.
