Ingredients:  
•7 pieces Manicotti, cooked
•1C part skim ricotta cheese
• ½ C shredded Parmesan cheese
•1 C shredded, cooked chicken
•1 Egg
•1 tsp oregano
•salt and pepper
•1 can Italian style crushed tomatoes
•2 Tbsp grated Parmesan cheese
•1 Tbsp chopped fresh basil OR 1 tsp dried
• ¼ C parmesan cheese
•6-8 basil leaves

1•In med bowl, combine chicken, ricotta, parmesan, egg, oregano, S&P together & stir till well mixed.
2•Stuff each cooked manicotti with ¼ C of the mixture carefully so it doesn’t tear & place in 9x13 greased dish.
3•Heat crushed tomatoes in small saucepan. Add 2T parmesan & 1T fresh (or 1tsp dried) basil, & heat until it starts to bubble. Simmer until heated through.
4•Pour 1C (or more) over the Manicotti & sprinkle with parmesan cheese & basil.
5•Bake at 350° for 35 minutes or until hot & bubbly.
