1¼ lbs. Sweet Italian Sausage
1 lb. Hamburger
3/4 C. Fresh Minced Onion
5 Cloves Garlic- crushed
18-20 Lasagna Noodles
1 (28 oz.) can Crushed Tomatoes
1 (16 oz) container Ricotta Cheese
1 (12 oz.) can Tomato Paste
1 (15 oz.) can Tomato Sauce
1 (15 oz.) can Petite Diced Tomatoes
1 C. Water
2 tbsp. Sugar
2 tsp. Dried Basil Leaves
3/4 tsp. Fennel Seeds
1¼ tsp. Italian Seasoning
1 tbsp. Salt
1 C. Parmesan Cheese- grated fine
1/2 lb. Medium Cheddar Cheese- shredded
1 lbs. Mozzarella Cheese- sliced
1/2 tsp. Salt
1 Egg
1/2 tsp. Black Pepper
4 tbsp. Parsley- divided

Directions:
Directions:
Cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in petite diced tomatoes, crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1½ hours, stirring occasionally.

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8-10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine Ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

Assembly: Layer in a lasagna baking dish in following order... meat sauce, noodles, 1/2 Ricotta mixture, 1/2 Mozzarella, meat sauce, noodles, Cheddar (all), 1/2 Parmesan, remaining Ricotta mixture, remaining Mozzarella, noodles, remaining meat sauce, remaining Parmesan, top with remaining parsley.

Cover with aluminum foil and let sit overnight or longer in refrigerator.

Preheat oven at 375º.

Bake in oven for 35 minutes with aluminum foil on (make sure to spray with cooking spray or make foil tent). Remove aluminum foil, and bake an additional 45 minutes. Cool for 15 minutes before serving.
