Ingredients: 1/2 c Krusteaz pancake mix
1/3 c water
1/4 c milk
1 egg
Powdered sugar
Any filling you like. My favorite is Pina Colada jam or Apricot jam. Strawberry, Raspberry, Cherry, Plum jams are also very good.
Whipped cream or Cool Whip-optioal
finely chopped nuts-optional

Directions: |
Directions:Mix Krusteaz mix, water, milk and egg in a bowl with an electric mixer or mix well with a wire whisk.
The batter will be very thin.
Spray a 10 inch non stick fry pan with cooking spray or coat bottom of pan with butter.
Put the pan on low medium heat and heat the pan
Pour about 1/4 cup into the middle of the pan
Lift the pan and rotate it so the batter is spread evenly in a thin layer to make about a 7 to 8 inch circle.
cook until bubbles rise and burst then flip to the other side and finish cooking.
Put the thin crepe on a plate, spread with butter, if you like, then spread on your favorite jam or filling.
Starting at one side roll the crepe up.
Sprinkle with powdered sugar and dollops of Cool Whip (optional) and sprinkle finely chopped nuts (optional) |
