3 small jars baby food carrots
1 1/2 cups oil
4 eggs
2 cups flour plus 2 tbsp.
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

Cream Cheese Frosting

1 3 oz. softened cream cheese
2 tbsp. softened margarine or butter
1 tsp. vanilla
2 cups powdered sugar
1/2 cup chopped nuts (optional)
milk

Directions:
Directions:
Beat sugar and oil, add eggs one at a time. Beat in remaining ingredients.. Pour into a 11 x 17 jelly roll pan, greased and floured. Make 6 cupcakes in addition to so the batter doesn't overflow the jelly roll pan. Bake at 325 degrees for 30 minutes. Can use a 9 x 13 cake pan and bake for 50 to 60 minutes.
Frost with Cream Cheese Frosting
Cream the cream cheese and butter or margarine together until fluffy. Add vanilla and powdered sugar. Beat until smooth. Add enough milk so it will spread easily.
