30 Minute Black Bean Chili Recipe

2 lbs. ground beef
1/2 c. chopped onion
2 cloves fresh chopped garlic
2 tsps. salt
2 tsps. chili powder
2 tsps. ground cumin
1 tsp. red pepper
2 cans rotel tomatoes
2 (16 oz) cans seasoned black beans
2 tbls. cornstarch
1/2 c. cold water

For condiments:
2 c. cheddar cheese, grated
1 c. sour cream
1 cup chopped green onions
1 c. fresh tomatoes, diced

In a 6 to 8 quart stock pot, brown ground meat. When meat begins to brown, add onions and garlic. Continue browning until meat is done.
Drain meat and return it to pot. Add seasonings, tomatoes and black beans.
Bring chili to a boil.
Reduce heat, cover adn simmer for 10 minutes, stirring occasionally to prevent it sticking.
Mix cornstarch and water in separate bowl. Stir until dissolves then add mixture to chili.
Stir well and continue to simmer for 5 minutes.
Reduce heat to low until serving.
Serve with condiments.
