2 eggs beaten
Salt and pepper to taste
Additions: cheese any kind, chopped onion, cooked hash browns, cooked chopped bacon or ham or cooked crumbled sausage, mushrooms, butter, jam or about anything you like with eggs or even try something new.
Top with cheese, or salsa, or ketchup, or sour cream or any of the above additions or any you think would be good.

Pour beaten eggs into a well sprayed or oiled small heated fry pan on medium low heat
Salt and pepper
Cover and cook until the edges about 2 inches in on all sides are set but center is still uncooked. if the center is cooked all the way it's ok too. It's easier to turn but sometimes it cracks apart when you fold it.
Run a spatula around the top edge of the pan to loosen egg edges
Quickly Flip to the other side with a large spatula
Cover again and cook about 15 to 20 seconds
Lower heat for gas stove or turn off heat but leave the pan on the stove for electric stove.
On half of the cooked eggs add any additions you like then
fold the other half over.
Set off heat and let sit covered for about 30 seconds especially if you used cheese that needs to melt.
Top with any of the topping ingredients.
If you use jam I would only use butter and jam inside the omelet and on top

I have also mixed chopped green onions or finely chopped cooked bacon or ham into the beaten eggs before I poured it into the pan.
I would imagine hot peppers would be good in it or on it too.
Omelets are very versatile and fun to try new things in them.
