6 (oz) water-packed tuna, drained
2 tbsp reduced calorie mayo
1 tsp lemon zest
1 tbsp lemon juice
1/2 tsp black pepper
1/2 small carrot, grated
2 tbsp parsley, fresh, chopped
1 medium shallot, minced
4 slices reduced calorie wheat bread-toasted
1/4 c arugula (or favorite lettuce) about 6 leaves

1.) Combine tuna, mayo lemon zest & juice, pepper, carrot, parsley & shallot in a small bowl; mix well.
2.) Layer 2 slices of bread with 3 lettuce leaves each & top with remaining bread slices & serve.
