Grandma's Fiesta Banana Cake Recipe

Ingredients: 1 1/2 cups sugar 1/2 cup Crisco 2 eggs (separated) 1 cup mashed bananas (approx. 3 small) 2 cups flour 1 tsp. baking soda 1 tsp. baking powder 1/2 cup soured milk (see below)(buttermilk will work as well) 1 tsp. vanilla 1/2 cup chopped walnuts (optional)

Directions:Preheat oven to 350º. Grease and lightly flour a 9x13 baking pan.
Before you start: Put one Tablespoon of Vinegar in a measuring cup then add milk to equal 1/2 cup. Stir and set aside. (This will be your soured milk later in the recipe.)
Cream together:
Sugar Crisco Egg Yolks Only (hang on to the whites) Bananas
Then add:
1 cup flour/baking soda/baking powder (mixed together) Soured Milk (from above) Vanilla 1 more cup of flour Walnuts (optional)
Whip egg whites (that were set aside) with beater until stiff. Then FOLD egg whites into cake mixture with a spatula.
Bake at 350º approximately 30 minutes or until edges slightly pull away from sides of pan and center bounces back when lightly pressed with finger. You can also do the toothpick test.
Cool completely before frosting. I like to use Grandma's Buttercream Frosting also in this cookbook. |
