1/4 lbs. Thick-sliced bacon, cut into squares
2 T. Olive oil
1 cup sweet onion, coarsely cubed
1/4 cup water
1/4 tsp. dried flaked red pepper
1/2 tsp. Garlic powder (or more, to taste)
4 or 5 medium tomatoes, peeled and cut into chunks
1/2 cup California dry white wine
1 tsp. dried sweet basil
Salt to taste
Grated Romano, Pecorino or Parmesan cheese
1/2 lb. Thin spaghetti

Saute bacon until golden, but not entirely crisp. Remove from pan and drain, leaving 2 T. Drippings. Add olive oil, onion and water; simmer 3 minutes. Add wine, garlic and tomatoes. Add bacon and red pepper. Cook 3 minutes. Add basil; taste for salt and add if needed. Cook about 5 minutes more, or until slightly blended--tomatoes will remain in chunks and sauce will be a bit liquid. Pour sauce over cooked and drained spaghetti. Reheat in serving casserole, tossing with grated cheese.
