2 tablespoons finely grated flax seed
1 cup sugar
2/3 cup vegetable oil
1 1/2 cups gluten-free flour
3/4 tsp. baking soda
1 to 2 Tbsp cinnamon (as desired)
1 tsp. nutmeg
1 Tbsp. vanilla extract
3/4 cup raisins or craisins
1 cup of preferred chopped nuts (as desired)

Mix 2 tablespoons of finely grated flax seed with 6 tablespoons of warm water and mix together until it makes an egg consistency. Set aside. Combine and mix dry ingredients, set aside. Combine sugar, oil, vanilla and mix in with the carrots. Combine dry and wet ingredients and mix well. Mix in the nuts. Pour mixture into loaf pan and bake at 350 degrees for 1 hour.

Gluten-free homemade flour recipe I use for this bread is 1 cup oat flour (can be made by blending whole grain oats) 1 cup tapioca flour, 1 cup potato flour and 1/4 cup fine grated flax seed. (Tapioca, potato and fine grated flax seed can be found in stores that sell in bulk such as Winco or Whole Foods)
