1 T olive oil
1/2 # cooked chicken, shredded
1 1-oz. packet Old El Paso Hot & Spicy Taco Seasoning
1/2 c onion diced
1 14.5-oz can diced tomato, drained really well
1 4.5-oz can Old El Paso chopped green chiles
10 Old El Paso stand and stuff taco shells
1/2 16-oz. Old El Paso refried beans
2 c Mexican Blend cheese, shredded
Topping such as sliced jalapenos, sour cream, salsa, chopped cilantro, shredded lettuce or any other favorite taco toppings

1. Preheat oven to 400. Spray 9x13 baking dish with nonstick spray and set aside.

2. Heat olive oil over med-hi heat in med skillet. Add onion and cook 2-3 min. or until trans-lucent and fragrant.

3. Stir in chicken, taco seasoning, tomatoes and chiles. Combine well. Reduce to simmer and cook 5-8 minutes.

4. Place taco shells in a baking dish, standing up, about 10.

5. Spoon 1 T beans into bottom of each, then chicken mixture almost to top. Sprinkle with shredded cheese. Bake 12-14 min or until cheese is fully melted and edges of shells are browned.

6. Remove from oven and top with favorite items.
