3 T olive oil, divided
3-5 garlic cloves, minced
1/2 t kosher salt, plus more to taste
1 t paprika
1/2 t chili flakes (or more to taste)
1 # shrimp, uncooked, shelled and deveined
4 T butter, divided
5 med. tomatoes, fresh, chopped into large cubes
1 1/2 c spinach
10 oz. fettuccine pasta
juice of 1/2 lemon or more to taste, divided
1/2 c grated Parmesan cheese at serving

Directions:
Directions:
1. In a large bowl, mix 2 T olive oil, garlic, 1/2 t salt, paprika and chili flakes.

2. Add the shrimp and stir to combine.

3. Heat a large pan on med-hi heat. Add 2 T butter, add shrimp. Cook, stirring often until shrimp is mostly cooked but still translucent in the center. Remove from heat.

4. Add to shrimp tomatoes and spinach. Mix all well and set aside while you cook pasta according to pkg. instructions.

5. Drain pasta, saving 1/2 c of cooking water. Toss the cooked pasta with the remaining olive oil to prevent pasta from sticking together. Add pasta and remaining 2 T butter to the pan with shrimp and veggies. Mix to combine.

6. Add half the lemon juice and 2 T pasta cooking water. Warm on med. heat until the shrimp is cooked through and all ingredients are heated through.

7. Adjust seasoning with salt, lemon juice and more chili flakes, if desired. You can adjust the consistence of the sauce with more of the pasta cooking water, if desired.

8. Top with grated Parmesan to serve.
