1 lb. red kidney beans
6 c. hot water
1 ham bone
2 c. onions (chopped)
½ c. celery (chopped)
½ c. green onions (sliced)
¼ c. parsley (chopped)
5 cloves garlic (minced)
1 tsp. salt
¼ tsp. black pepper
¼ tsp. cayenne pepper

In a 4-quart casserole, soak beans overnight. Drain. Add water, ham bone, onions, celery, green onions, parsley, and garlic. Cover with lid and cook in microwave oven on high for 15 to 20 minutes or until boiling. Adjust microwave to 50% power and cook beans for 1½ to 2 hours, stirring every half hour. Remove bone and add salt, pepper, and cayenne pepper. Remove 1 cup of the cooked beans, purée, and return to the beans. Mix well.
