Chai Tea Concentrate Recipe

12 cups of water
4 T vanilla
8 tsp. black tea (6 tea bags)
1/3 cup sugar
Spices

2 cinnamon sticks
1/2 tsp ground cinnamon
2 star anise, broken up
1/2 whole nutmeg, grated
6 tsp. of cardamon or 6 crushed pods
1/2 tsp. ground clove (optional)
1/2 tsp. ground ginger (optional)

Step 1- Assemble the spices;crush the cardamon pods, break the cinnamon sticks in half, break the star anise into pieces. Add the optional spices if you want a spicier flavor. Place the spices in a spice bag.

Step 2-Add water to the pot. Add the vanilla and spices and bring to a boil.
Boil 5-10 minutes. I boil mine for 7 minutes to get a nice mellow spice flavor that isn't overwhelming.The longer you boil the stronger the flavor.

Step 3-Add the tea to the pot of spices and steep tea 8-10 minutes. The tea will get bitter if you go longer than that.

Step 4-While the tea steeps, warm your dairy of choice in a small pot or microwave. Whisk until foamy.

Step 5-Remove tea bags and spice bag. Pour tea/spice mixture through a fine mesh strainer into a warmed tea pot. Add the sugar. Stir until dissolved.

Step 6-Fill tea cup halfway to 3/4 full with chai tea and top off with your warmed dairy choice.

Step 7-Place the remaining chai tea concentrate into a container and refrigerate. It will last 1 month in the refrigerator.

I have been searching for quite some time now for a recipe that could replace it. This recipe is it. I love this stuff. I make it weekly, varying the spices and the black tea according to my whim. Assume a mason jar in my refrigerator has this chai tea in it. I do try to label them but ...
