3-4 lb. tenderloin
1 orange, cut into 1 inch wedges
3 cloves garlic, cleaned and whole
sea salt and pepper to taste

Directions:
Directions:
1. Rinse and pat dry the tenderloin. Place the tenderloin on cutting surface lengthwise. Score the tenderloin approximately 2 inches apart.
2. Place an orange wedge in each score and place the tenderloin on a rack inside the roaster.
3. Add sea salt and freshly ground pepper to desired taste.
4. Place the garlic cloves on top of the tenderloin.
5. Turn the roaster to 250 degrees and place lid on the roaster. Roast for approximately 6-7 hours, or until the internal temperature of the tenderloin reaches approximately 165 degrees.
6. Remove the tenderloin from the roaster and place in aluminum foil, sealing the edges. Allow to rest for at least 30 minutes.
7. Remove from aluminum foil, place on cutting surface and remove the orange wedges from the tenderloin. Using the scores as your guide; cut the tenderloin and serve with desired sides.
