1 (20-ounce) package refrigerated cheese tortellini
1 cup fresh mozzarella, cubed
1 cup pepperoni, chopped
1 cup cherry tomatoes, sliced
1/3 cup fresh basil, chopped
2/3 cup Caesar salad dressing
Salt & pepper to taste

Directions:
Cook tortellini according to package directions; drain and rinse with cold water, then drain again. Transfer cooked tortellini to a bowl and add remaining ingredients. Toss well. Refrigerate at least 1 hour before serving.

Notes: I use mini turkey pepperoni – don’t have to chop them! I also use light Caesar dressing and use about half the bottle the night I make the salad and then add more before serving if it seems dry. Also, I can’t always find fresh basil, so if not, I substitute a little bit of dried basil.
