1 medium head of red cabbage
6 strips bacon, diced
1 large onion, finely diced
2 1/2 T. sugar
1/4 tsp. salt
1/4 c. water or apple juice
1 T. cider vinegar
1 T. cornstarch
1/2 c. water or apple juice

Directions:
Directions:
Peel away tough outer leaves of red cabbage, core, and shred fine or medium to suit you. In a large skillet over low heat, cook the diced bacon and onion, stir frequently until onion is golden. Add cabbage and cook 3-4 minutes. Dissolve the sugar and salt in the 1/4 c. water or juice and shake over the cabbage. Cover with lid tightly and cook over low heat until cabbage is tender, about 20 minutes. (Check cabbage frequently to see if more juice might be needed to keep cabbage from sticking.) In a small bowl, whisk together the vinegar, cornstarch, 1/2 c. water and juice till smooth. Add to cabbage and cook, stirring until mixture is thickened as desired.
