8 slices bacon, diced
1/2 cup chopped onion
2 cups fresh black-eyed peas
Or 2 10-ounce bags frozen black-eyed peas
1 cup uncooked long-grain white rice
4 cups water
Salt and pepper to taste

Directions:
Directions:
Place bacon and onion is Dutch oven and sauté over medium heat until bacon is almost crisp and onions are translucent. Add peas and rice, then water. Cover and simmer over very low heat for about 20 minutes, or until rice is tender. Add salt and pepper to taste.
