Olive Oil Cooking spray
8 celery ribs (rinsed)
1 standing rib roast (4-5 pounds)
2 teaspoons sea salt
1 1/2 teaspoons coarsely ground black pepper
1/2 cup dehydrated minced onions
2 teaspoons chopped garlic
(I usually substitute Montreal Steak Seasoning for the above spices)

Directions:
Directions:
Preheat oven to 325 degrees. Coat 9x13” baking dish with cooking spray.
Cut celery into 7 inch ribs. Lay across center of dish. Place roast on top. Sprinkle roast with the seasonings.
Bake 2 1/2 hours or until internal temperature reaches 145 degrees (medium-rare) up to 170 degrees (well-done). Let stand for 10-15 minutes before slicing.

This has now become the entrée for our Christmas Eve dinner. Publix usually has them on sale for a really good price between Thanksgiving and Christmas. Be sure to check for doneness with a meat thermometer during cooking - you definitely don’t want to overcook it!
