24 large fresh mushrooms
1 pound lump crabmeat
1/4 large green pepper
1/4 medium onion
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon prepared mustard
Salt and pepper to taste

Directions:
Directions:
Place crab in a mixing bowl. Add finely minced onion and green pepper to crabmeat along with the other ingredients, except mushrooms. Be careful when folding ingredients together to preserve lump texture of crab.

Wipe off mushrooms with a damp cloth and remove stems. Stuff caps with crab mixture and place in refrigerator for at least 2 hours. Bake in a 350 degree oven until mushrooms are tender, about 10 minutes. Brown off under the broiler and serve immediately.

Optional: Add some shredded fresh parmesan cheese to the top before baking.

This recipe came from A Restaurant by George, in Nags Head. Mom used to make them sometimes. Of course, they were much better when she was using fresh Outer Banks crabs! I pulled out the recipe a couple of years ago and made them for a Christmas Eve dinner.
