! large yellow onion, diced
1 small red pepper, diced
1 large clove garlic, minced
2 Tablespoons butter
1/2 pound Italian sausage, cooked and crumbled
1 can artichoke hearts, drained and halved (14 oz.)
8 eggs
1/2 cup heavy cream
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil
1/2 teaspoon oregano
1 cup shredded provolone
1/2 cup shredded fresh parmesan

Preheat oven to 425. In skillet, cook onions, peppers, and garlic in butter. Spread in bottom of a greased 2 quart shallow baking dish. Sprinkle with sausage. Arrange artichokes on top of sausage. Beat eggs, cream and seasonings. Mix in cheeses. Pour into baking dish. Bake 15-20 minutes or until set. Let stand for 5 minutes before serving. Serves 6.
