8 potatoes, washed.
2 eggs
3 green onions, finely sliced
2 small sweet pickles, diced
1/2 cup sweet pickle relish
paprika (enough for sprinkling on top of finished salad)

Dressing Ingredients:
1 cup Miracle Whip
1 Tbsp mustard
2 tsp paprika
1 tsp salt
1/2 tsp pepper
2 tbsp white vinegar
1 tbsp sweet pickle juice

Directions:

Boil potatoes whole with skins on.
Boil eggs
Make dressing by combining all dressing ingredients and whisking until smooth.
When potatoes are tender, drain, and when cooled just enough to handle, chop and put into large bowl.You can leave the skins on or peel them just prior to chopping.
Add the green onion, pickles, and pickle relish. Chop one egg and add. Mix all well.
Top with sliced boiled egg.
Sprinkle with paprika.

Important to use green onions. and to add dressing when potatoes are still warm, so they absorb it better. This is my own recipe, which I made after gathering tips from other's that I liked. Specifically, Rose Ball taught me to add the dressing when potatoes were still warm and my friend Sharron Harrison taught me to use green onions.
