3 eggs
1 c. vegetable oil
1 ½ c. sugar
2 c. grated, well-drained zucchini
2 tsp. vanilla
2 c. flour
¼ tsp. baking powder
2 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
2 c. raisins or dates
1 c. chopped walnuts

Directions:
Directions:
Beat eggs lightly in large bowl. Stir in oil, sugar, zucchini and vanilla.
In another bowl, sift together flour, baking powder, baking soda, cinnamon and salt.
Stir dry ingredients into egg mixture. Blend well.
Stir in raisins and walnuts.
Spoon batter into 2 well-greased 8 x 5 loaf pans.
Bake at 375 degrees until center springs back when touched – 20-30 minutes.
Cool 10 minutes. Remove from pans. Cool.
