1 t. olive oil
2 pounds peeled and deveined shrimp (if large shrimp, cut into thirds)
2-3 t. ground cumin
1 t. minced garlic
3/4 c. sour cream
1 bunch green onions, sliced
1 9 ounce bag yellow, white, or blue corn tortilla chips
4-5 c. grated pepper jack cheese
1/2 c. sliced pickled jalapeno

Heat oil in large skillet over medium heat. Add shrimp, cumin, and garlic; saute 3 minutes or until shrimp are pink. Combine cooked shrimp, sour cream, and onions in a large bowl. Spread tortilla chips on an aluminum foil lined baking sheet. Top with shrimp mixture. Sprinkle with cheese and top with jalapeno. Broil 5-6 minutes or until cheese melts and nachos are heated through. Serve immediately.
