1 lb. ground beef
1 small onion, chopped
1 small green pepper, chopped
1 10 ounce can mild diced tomato and green chilies
1 small can green chilies
1 1/2 cups water
1 c. uncooked long grain rice
1 packet taco seasoning
1/2 t. salt
2 c. chopped lettuce
1 tomato, diced
1 avocado, sliced/diced
1 small can sliced black olives
1 c. Mexican blend shredded cheese

Directions:
Directions:
Cook first three ingredients. Stir in cans of diced tomato and green chilies. Add in next four ingredients. Cook 15 minutes covered. Uncover and cook 15 minutes more. Pour the ground beef and rice mixture in a big bowl. Around the outer edge of the bowl sprinkle the lettuce and next four ingredients in a pretty display. Stand tortilla chips behind the lettuce and use for dipping into the hamburger/rice mixture.

Meg always talked about how her boys LOVED this recipe--she said Buddy didn't dig it, but the boys LOVED it. So I asked for the recipe for Mike and Jack who also LOVED it. About once a month Meg would call me because she couldn't find her copy of the recipe....this went on and on for years. At one point I considered putting the recipe in a frame and giving it to her as a gift. xo
