1 pk. of fresh mushrooms, finely chopped.
6 strips of bacon, thinly sliced
1 small onion, diced
2 garlic cloves, minced
2 lbs. potatoes
2 c. of 1% or 2% milk
1/2 c. whipping cream (35%)
1/4 c. concentrated liquid chicken bouillon
pinch of nutmeg
pepper to taste
1 c. grated Gruyere or Swiss) cheese

1. Preheat oven to 350º.
2. Butter a 1.5-2 L. casserole dish
3. In a large skillet, fry the bacon & onion for 5-8 minutes. Add mushrooms and garlic and cook for another 5 minutes or until bacon is crisp. Remove from heat.
4. Peel potatoes and slice thinly.
5. In stock pot over medium heat add milk and cream and stir constantly until it simmers or gets foaming. Add nutmeg and bouillon. Stir and then add potatoes. Bring to a simmer.
6. Stir mixture regularly until potatoes are tender - about 10 minutes.
7. Using a slotted spoon, place layer of potatoes (about half) in casserole dish and top with bacon mixture. Repeat.
8. Pour liquid over potatoes.
9. Cover and bake for 30 minutes.
10. Uncover and top with cheese. Continue to bake for 20-30 minutes.
11. Let stand for 15 minutes before serving.
