Ingredients:  
Moose: Upper leg bones cut into 4 pieces
2 turkey wings or pork hocks
small piece of salt meat
2 large onions
1/4 c. pepper
1/2 tsp. nutmeg
salt to taste

Directions:
Directions:
1. In large stock pot add bones, salt meat & turkey/pork hocks along with enough water??? and bring to a boil. Reduce heat and simmer for 4-5 hours.
2. After about 2-2.5 hours add the onion, 1/2 of the pepper and salt.
3. After 4-5 hours, remove meat from bones and return to pot, simmering for another 1/2 hour.
4. Strain through cabbage collinear??, saving liquid and drippings
5. Using a food processor, mince everything together and return to pot.
6. Add enough of the reserved pot liquid/drippings to make a soft, wet mixture.
7. Simmer until most of liquid has evaporated. Add remaining pepper & nutmeg.
8. Pour into moulds???
