1 lb. Ditakini pasta (or elbow macaroni)
3 medium ripe tomatoes
2 T. lemon juice, divided (maybe a bit more to taste)
5 T. olive oil, divided
1 tsp. Kosher salt
1/2 tsp. coarse black pepper
1/4 c. chopped fresh parsley
1/4 c. chopped fresh basil
3/4 lb. fresh mozzarella, cut into bite sized chunks

Cook pasta according to directions. Drain the pasta while pasta cooks. Chop tomatoes. Transfer the tomatoes, along with any juices that accumulated while chopping, into a large mixing bowl. Add 1 T. of lemon juice, 2 T. olive oil, salt and pepper. Stir. Add the drained pasta to tomatoes. Stir to combine. Allow the pasta salad to cool to room temperature. Cover and refrigerate for up to 2 hours. 15 minutes before serving, remove pasta from refrigerator. Add parsley, basil, the remaining lemon juice, and 2 T. of olive oil. Stir. Taste. Can add more salt, pepper, lemon juice, or olive oil to enhance flavor. Right before serving, add chucks of mozzarella and drizzle with 1 T. olive oil.
