1 Cup Flour
1 Cup Cornmeal
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
Jalapeno Pepper chopped small
(Mix above - Dry)

Wet Ingred. & Sugar:
1 Egg (wisk)
1/3 Cup Milk
1/4 Cup Melted Butter or Coconut Oil
1 Cup Greek Yogurt (you can do combin. of Apple Sauce if you like)
1/4 Cup White Sugar or Coconut or Cane Sugar (I add a packet of Stevia Sugar)

Put in my flexy muffin container and use an ice cream scoop to easily put into indiv. cups. I use Convection heat of 400 degrees for about 15 min...but test with knife for doneness.

Jalapeno puts a zip in these muffins. Goes well with Curry's, Chillies to dip these gems in. Yum.... Mark and I have loved since March 2013.
