2 pkg. Ramen noodles dry soup mix, any flavor
4 c. water, boiling
Dressing:
1/2 c. lite coconut milk
1/3 c. creamy peanut butter
2 T. fresh lime juice
1/8 tsp. crushed red pepper

1 lb. cooked shrimp, peeled
1/2 seedless cucumber, sliced in 1/4" slices
4 scallions, sliced diagonally
Lime wedges

Bring water to a boil in a large skillet; crumble dry soup mix and add to boiling water (save seasoning packets for another use). Cover skillet, remove from heat and let stand for 5 minutes.

In a medium bowl, whisk all dressing ingredients together. Drain noodles; toss with the shrimp, cucumber, scallions and dressing.
