1 cup rice
¾ cup sugar
½ teaspoon vanilla
2 cups milk
grated nutmeg or cinnamon (or both)

Directions:
Directions:
Boil rice until very soft (1 cup rice, 2 cups water per package) then add the milk and let it come to a good boil. Add the sugar and cook one minute longer. Then take from the fire and add the vanilla. Place in a dish to cool. Sprinkle top with the nutmeg/cinnamon and serve cold. If served warm, it will be soft and not set. You could add raisins soaked in rum and then drained at the same time you add the vanilla.
