2 large fryers or 1 hen
salt & pepper to taste
celery & onion if desired
1 1/2 sticks butter
2 green peppers, chopped
1 1/2 lbs velveeta cheese, cut into chunks
2 lg onions, chopped
16 oz pkg thin spaghetti
1 can rotel tomatoes
2 cans (17 0z) tiny english peas plus juice (optional)

Directions:
Directions:
Wash and cover chickens or hen with water in large pot, add celery and onion to season the stock, cook covered until done. Let cool in broth enough to handle. Remove and debone, save stock. Saute peppers and onions in butter about 45 mins. Do not brown. Cook spaghetti in broth, add water if needed. do not drain. Add onion, peppers,and chicken, mix together. Add tomatoes rotel tomatoes and cheese. Mix lightly until cheese melts. mix in peas plus juice. Easier if made a day ahead and refrigerated in casserole dishes, heat in moderate oven (350) for 45 mins before serving. Freezes well nice company dish
