1 tsp Cinnamon
1/4 tsp Nutmeg
Dash of Salt
1 1/2 cup Prepared Pumpkin (See below)
2/3 cup White Sugar
1/4 tsp Ginger
1/4 tsp All Spice
3/4 cup Hot Milk

Directions:
Directions:
Beat eggs until whites and yolks are well blended. Gradually beat in sugar and add spices and salt. Stir in prepared pumpkin and milk. Pour into pie shell and bake in preheated oven at 450º for the first 10 minutes then reduce temperature to 350º and bake for 20-25 minutes or until filling is firm.
Cool and serve with whipped cream.





Prepared Pumpkin
Hollow out pumpkin and cut meat into small pieces. Simmer in 1/2 - 1 cup water for approx 1 hour. When soft, mash and measure into 1 1/2 cup containers. Unused portions can be frozen.
