6 c. grated zucchini
1/2 c. onion, chopped
1 can cream of chicken or celery soup
1/2 c. butter or margarine, melted
8 oz. sour cream
1 c. carrots, shredded
8 oz. seasoned stuffing mix

Directions:
Directions:
Cook squash and onion in a small amount of water for 5 minutes; drain well. In a large bowl, combine soup, sour cream and carrots; fold in squash and onion mixture.

In a small bowl, combine melted butter and stuffing mix. Place half of the stuffing mixture in the bottom of a 9x13 pan; pour in the squash mixture and then cover with the remaining stuffing mixture.
Bake at 350 F. for 20-30 minutes.
