Italian Style Zucchini Recipe

4 T butter
2 T Olive Oil
1 Walla Walla Sweet Onion, sliced, or other sweet onion
6 medium Zuchinni - 1/4 inch slices
Salt and Pepper to taste
Fresh Oregano or Rosemary to taste
Fresh Grated Parmesan Cheese

1) In a large skillet or electric fry pan, melt the butter and Olive Oil on medium heat
2) Add the onion and sauce' until just transparent
3) Add the zucchini over the onions
3) Season as you wish
4) Fry SLOW with the lid on until al dente' ~ not "mushy" ~ about 15 minutes
5) If the zucchini starts to stick, add a little hot water, so that it steams or white cooking wine
5) Optional - at the last minute add some fresh grown sliced tomatoes
6) When you serve it, add the freshly grated Parmesan Cheese on individual plates

A recipe that my Mom and I "made up" over the years, and especially when she had a vegetable garden. The trick is not to fry the zucchini hard, but to sauce' and steam
