1/3 cup canola oil
2 tsp Dijon mustard
½ tsp chopped fresh tarragon
salt & pepper
170-225 g (6-8 oz) Kerry gold Dubliner cheese, grated
1 can, 425 g (15 oz) sliced pickled beets
3 tbsp white wine vinegar
8 large butter lettuce leaves (I use more)
1 ½ cups thinly sliced English cucumber

Directions:
Using a small bowl, whisk or stir together oil, vinegar, mustard, tarragon and salt and pepper to taste. Mix the remaining ingredients together. Add the dressing just before serving.
