1 T. olive oil
1 medium onion, chopped
1 medium green pepper, seeded and chopped
2 medium garlic cloves, minced
1 tsp. cumin seeds
1 c. dry lentil, picked over, rinsed and drained
3/4 c. salsa, or green variety
1 medium potato, peeled and cubed
1 medium yellow summer squash, cubed
2 T. parsley, fresh, chopped
14 oz. Butterball Turkey Kielbasa, thinly sliced
4 c. chicken broth

Directions:
Heat the oil in a large non-stick saucepan over medium heat. Add the onion and bell pepper and cook, stirring frequently, until very tender, about 8 minutes. Add the kielbasa, garlic, and cumin; cook until fragrant, about 2 minutes. Add the broth, lentils and salsa; bring to a boil. Reduce heat and simmer, partially covered, until the lentils are almost tender, about 20 minutes. Stir in the potato and squash; return to a boil. Reduce the heat and simmer, partially covered, until all of the vegetables and lentils are very tender, about 15 minutes. Remove from heat and stir in the parsley. Yields four 1 1/3 c. servings.
