1 c. flour
2 eggs
1 c. milk
1 to 3 tsp. sugar
1/4 tsp. salt
1 tbs. lemon extract

Directions:
Directions:
Beat eggs slightly, add sugar and milk. Add flour and salt, beating just enough to obtain a smooth batter. Add flavoring.
Heat 3" oil to about 375º. Dip iron in oil and lift out, shaking off excess. Dip iron in batter only to depth of form, and dip in hot oil, tapping batter from iron, until lightly brown. Remove and cool on paper towel to absorb oil. If cookies are crisp, batter is too thick - thin with milk.

Sprinkle with 10x sugar before serving.

NOTE: other flavoring may be substituted for lemon.
