3 heaping cups flour (King Arthur all purpose)
1 package Yeast
1 ¼ cups water (approximately)
1 teaspoon salt, heaping
Dissolve the yeast in small dish with ½ cup warm
water and a pinch of sugar

Directions:
Directions:
Mix flour and salt in bowl or stainless steal pan (no plastic)
Make a well in center of the flour and add the yeast mixture
Add 1 cup warm water
Knead the dough while in the pan, scraping sides and stretching the dough. When the
dough pulls away from sides of pan, it is ready. (You may need to add sprinkles of water if too dry) This should take about five minutes of paddling the dough.

Make the sign of cross on the top of the dough and cover with towel.

Let it rise in a warm place until it doubles in size. About 45 minutes.

Place the dough on cutting board dusted with flour and need dough for approx 8 to 10 min
dusting with flour as needed so it does not stick to board or hands. Form into a round loaf.
Let it rest on board for about 15 min. covered with a clean towel until doubles in size.

Oil the inside of a broiler oven pan using olive oil. Spread and stretch the dough to fit
pinching the edges to stay and hold the sauce. Spread as much sauce as you like.

Sprinkle a small amount of grated Romano and or Asiago cheese. Top your pizza with your choice of olives, peppers, pepperoni etc. Then cover with good amount of shredded
mozzarella cheese.

Let the oven reach and stay at 400 degrees for ten minutes. (Needs to be very hot) place pan on middle or bottom rack for approximately 20 minutes or until the underside of pizza is crispy golden brown.

The most important part of this process is:

Make the sign of cross on the top of the dough and cover with towel.

If you do not do this then your dough will not raise and you will be very disappointed!
