2 large cans 28 oz. Tomato Sauce
2 large cans 28 oz. Tomato Puree
2 small cans Tomato Paste
1 lb Italian Sausage (mix mild and hot for more spice)
Meatballs:
1 lb ground chuck
1 egg
1/2 cup italian breadcrumbs
Salt and spices to taste

Start by sauteing some garlic in olive oil in a large sauce pan or
Dutch oven pan
on top the stove. Put in the tomato sauce and puree. Rinse the
cans with about 1/3 the amount of water and add to pan. Add
seasonings like parsley, basil (fresh or dried) salt, pepper along
with a few bay leaves. Stir with your wooden spoon and simmer
while cooking sausage and making meat balls.
Pan cook Italian sausage in a frying pan until nicely browned on
outside. If you want to have some hotness to the sauce use about
one pound hot Italian sausage or mix some mild and some hot.
As they are browned, spoon them into your sauce mixture.
Meatball mixture is approximately one pound ground chuck, one
egg and about ½ cup of bread crumbs. Mix well and roll between
hands making meat balls the size you like. Make sure they are
packed pretty tight into a ball. You can use the same pan as the
sausage to brown them as it will have grease from the sausage.
Add the meatballs as they are browned to the sauce mixture as
well.
After cooking all sausage and meatballs, put the tomato paste
into the frying pan. Fry the paste until all the remnants from the
meat is absorbed. Add the paste from the frying pan into the
sauce mixture, stirring well with your spoon. While leaving the
spoon in place.. cover the pot. The spoon leaves the top open
just the right amount of space!
Simmer the sauce like this for about 5 or 6 hours on top of the
stove. Use water to thin to sauce to desired consistency. Taste
and add more seasoning throughout the cooking time as desired.

Leave some of the meatballs to have with dinner!
Cook your choice of pasta noodles al dente, add sauce and top
with Romano or Parmesan cheese.
Some good brands of Tomato sauces are Contadina, DeFratelli
or other brands from Italy. Generally, equal parts Sauce and
Puree, half the amount of paste.
