2 TBSP Butter
1 Small finely chopped Onion
2 Glasses Pickled Beets
1/2 Cup Whipping Cream
1.5 Cups Vegetable Stock
1 Medium Orange
2 Apples sliced
Salt, Pepper

Directions:
Directions:
Heat pot over medium heat, add 2 TBSP Butter and fine chopped onions....stir until light brown and golden.
Add the content of the two drained glasses beets
Add the sliced apple and squeeze the juice of one orange and place the two half oranges in pot.
Add Salt and Pepper than add 6 cups of stock and let boil for 15-20 minutes until beets are soft.
When beets are soft take out the two orange halfs and use hand blender to puree soup.
Add Whipping cream and a splash of nutmet
Bring to fierce boil for about 3 minutes
Arrange in a warm place or corree cup topped with frothed milk cap (use cappuccino steamer with skim milk) and serve with a big proud smile.
