3 Cups Sugar
3 Cups Water
3 Cups Vinegar
1.5 TBSP Cinamon
1.5 tsp All Spice
1 Lemon, slices (if desired)

Boil for 5 minutes

Beets....fill large pot. (10 lbs)

Cook with skin on, Approx 1 hour. Stick knife in for tenderness close to the hour. May go longer. Sterilize bottles .... heat 250 degree oven to have hot bottles. Fill bottles with beats and fill with hot liquid. Never put hot beets and liquid in cold jars.... will bust (this has happened to moi).... hee hee!
