One large package of frozen Cheese filled Tortellini
One 5 oz. package of fresh parmesan or similar shredded cheese
One large tomato - cute into very small pieces (could use roasted peppers)
Oen large bottle of calmatta olives (can use capers)
One 1/2 large green pepper - chopped finely
One large can of marinated artichoke hearts - cut up
Finely chop six to eight cloves of garlic

1) Cook tortellini and let cool
2) Mix all ingredients
3) Add to the cooled tortellini
4) After mixing, add a common of the following to taste:
Olive Oil
Vinegar
Salt and Pepper

5) Let set for at least two hours before serving
6) For taste and texture, add more of the "oils"

Ann-Patrice ~ This is a recipe given to me from my cousin MaryAnn and my brother, Johnny. They grew up with this recipe from my Dad's side of the family. The very first time I was back east to visit my Dad, I remember walking into my Aunt Margaret's kitchen and having it served with homemade meatball sandwiches and hot peppers! What an introduction to the Italian side of the family. Excellent memory. Keep in mind, it can expand as you make it....or so it seems!
