For Dressing:
1/4 cup apple cider vinegar
1 tsp. Dijon mustard
Salt, to taste
1 Tblsp. + 1 1/2 tsp. pure maple syrup
1/4 cup +1 Tblsp olive oil
For Salad:
1/2 head red cabbage
1/2 head savoy cabbage (I use green cabbage)
1 Asian pear, halved, cored and sliced into thin strips
1 cup seedless red grapes, halved
1 cup seedless green grapes, halved
1/2 cup toasted walnut pieces

Directions:
Directions:
In a small bowl, whisk together vinegar, mustard, salt and maple syrup. Slowly whisk in olive oil until well blended to make a vinaigrette. Taste and adjust seasonings to your liking.
Cut each cabbage in half lengthwise into two wedges, then cut away and discard core from each wedge. Cut each wedge crosswise into thin shreds. Toss together cabbage, pear slices, grapes and walnut pieces in serving bowl. Drizzle with vinaigrette and toss well. Serve immediately, refrigerating any leftovers.
